Produced from the classic Valpolicella blend of Corvina, Rondinella and Molinara grapes, which are further enhanced with Amarone or Recioto pomace and a second fermentation. This is the process from which Ripasso gets its name, Ripasso meaning "to pass again". 
The resultant wines are richer, slightly sweeter and smooth, taking on some of the qualities of Amarone. In fact, some refer to Ripasso as "baby Amarone".
This Casalforte Ripasso has many of the classic aromas and flavours you would expect from a Ripasso, but in a more medium bodied wine. There is a typical nose of cherry, blackberry and spice with subtle sweetness and hints of violets. The palate is soft and velvety, the cherry fruit complemented by notes of vanilla, violets, raisin and a slightly smokey finish from the 12 months oak ageing. 
Pair with Lamb, Mushroom dishes and mature, salty cheese.
